Sugar content is impacted by soil fertility and balance, amount of
sunlight, and type of grass. Typically you'd find a higher sugar content
in ryegrass, than some other grasses.
I'm aware that there was a study in either Oregon or Washington state
comparing the sugar contents of ryegrass vareities some years ago. Might
not be relevant anymore, since new varieties get introduced to replace old
ones all the time.
Starch is a different situation.
