Here in NZ the galv rods are the norm. I would suggest that if you use
copper then do not use galv wire (corrosion / connection problems)

I know that kiwi fences are far stronger than many others, but it is a
definite no no to have the electric fence near the dairy. Even the best
earthing systems can fail and cause small electrical leakage into the
dairy resulting in unsettled stock (some a more sensitive than others,
and / or increased mastitis or cell counts). It is recommended to keep
fence earths many metres away from other earth systems.
