Listeria monocytogenes is a major concern for processors of ready-to-eat
meat and poultry.
The article tells of USDA research which found that a combination of an
oxidative bacterium known as Gluconobacter asaii, and a mixture of six
bacteriophages, reduced L. monocytogenes populations by more than
99.999 percent.
